Raw Salsa

My family is addicted to Mexican cuisine. One of our favorites is salsa. But all salsas are not created equal! Several years ago, I came across this great recipe for raw salsa and I’ve been making the same recipe ever since. This recipe is a family favorite and it’s bursting with flavor and nutrients! If you love salsa as much as we do, I beg you to try this simple recipe.

4 tomatoes, chopped
2 cloves garlic
1 Tablespoon cider vinegar
1 Tablespoon olive oil
1 Tablespoon lime juice
1/4 cup parsley (optional)
1/2 cup cilantro
1 teaspoon cumin
1 teaspoon sea salt
Jalapeno (optional)

Place the lime juice, cilantro, parsley, garlic, cider vinegar, olive oil, cumin and sea salt in a food processor and blend until well mixed. This can be done without a food processor, it just takes a little more work. Add in the tomatoes and pulse chop until everything is diced and blended. Enjoy!
